Veggies for Breakfast!

I think breakfast is the most important meal of the day.  I know I'm not the only one.  And I know I didn't think of that idea.  But it's true!  And so many people just ignore the facts.  Breakfast is your chance to start your day off right, people.  Let's not mess around!

Last night for dinner I heated up some leftover Chicken with Forty Cloves of Garlic, and cooked some brown rice and sauteed veggies to go with it.  I used a yellow summer squash, a zucchini, and a pint of baby bella mushrooms.  Slice 'em up, throw 'em in a pan with a little butter and olive oil, sprinkle with salt and pepper, dried (or fresh, if you've got some) thyme, and a tiny splash of white wine, and cook until tender but not mushy.  I made way more than we needed on purpose so that I could have...



VEGGIES FOR BREAKFAST!

I got the leftovers out of the fridge, tossed them back in a pan for a few minutes to warm them up, and topped them with a little bit of freshly grated parmigiano reggiano and a scrambled egg.  I made some coffee and toast, and had a breakfast fit for a queen.  I sat for a minute, looking out the window at the sunshine warming the brand new leaves and buds, and I felt so happy.  Then I realized I was running a teeny bit later than I would have liked, and I hightailed it out of there!  But just taking those few minutes to sit at the table and eat my breakfast completely set the tone for my day.  Calm, energized, and so grateful for the long-awaited arrival of spring!  My tastebuds and my spirit danced right out the door.  What has your breakfast done for you lately?
